From Bean to Brew

To draft a cup of coffee that continues to entice you after the first consumption, to be good enough to bring you back is no easy task, and nor is it one that is cultivated solely by our baristas but by our partners and so many other individuals who make the brew possible. To conceptualize the bean, it is important to understand that it is actually a seed. Dwelling in shaded nurseries, the seedlings are tended to until they produce more coffee trees to enable the supply of seeds to then be dried, roasted, and ground into the beans as we know it now. Although Sonndr’s signature drip coffee rotates on a biweekly basis, our current rotation is Van and Co’s Brazil, Carmo de Minas. As for espresso, we use an exclusive blend only available at Sonndr Cafe: Ethiopia Shakiso / Brazil Carmo de Minas.

Van and Co’s Brazil, Carmo de Minas has tasting notes of toasted nut and dutch cocoa – a harmonious melody of warm, yet dark savors. It is produced by the Pereira Family at the Fazenda Sertāo farm, created through a natural process at an elevation of 1,100 - 1,400 metres above sea level.

Our signature espresso blend provided to us by our partners, Van and Co, is Ethiopia Shakiso / Brazil Carmo de Minas – a unique yet warm, familiarly fragrant flavour composed of notes of dark cocoa and ripe stone fruit.

After coffee seeds are planted, it takes about three to four years for the trees to yield more fruit for harvest. When ripe, the cherries are stripped off the branches through either a hand or machine process. The beans are then dried and milled, and exported to be roasted. After being roasted, the coffee is ready to be grinded within the spaces in which they are served to maintain the integrity of the flavor and aroma for its consumption. At Sonndr Cafe, we freshly grind the beans for each cup of coffee to ensure we are delivering the best taste possible. Whether with steamed milk or additionally sweetened and flavoured, the fundamentals of the cup remain intact to ensure a consistent taste you can rely on.

Though, the craft does not have to end at Sonndr Cafe. We sell whole beans both on our website and in-store for you to take the flavors that not just us, but other individuals during each process partook in delicately crafting. We can also grind beans in-store specifically for your medium of choice for an easier process.
